Wrapped in banana leaves at sunset. Lowered into the sand pit at midnight. Unearthed at dawn. By the time it reaches your table it has been cooking longer than your guests have been awake.

Luqaimat fried to order — golden, honey-drenched, dusted with sesame. Sago pudding set in individual clay cups. The kind of ending that makes people stay another hour.

Four spices only. Loomi, turmeric, cumin, coriander. Worked into the lamb by hand the night before. No shortcuts, no substitutions.
Banana leaves sealed with palm fronds. The steam that builds inside is what makes the meat fall from the bone.
Lowered into ember-filled sand pits at midnight. Covered. Left alone. The earth knows what to do.
At dawn, the sand is brushed away. The lamb is lifted. By the time it reaches your table, it has been cooking for 48 hours.
